Our range of specific ingredients compared to standard spray milk powder, provides milk chocolate with greater resistance to fat bloom, a creamier texture and better rheology (plastic viscosity and flow limit) with the same level of total fat. From an economic point of view, it could allow you to achieve the same rheology with less fat and therefore with a reduction in cost, since fat (cocoa butter and milk fat) are the most expensive ingredients in chocolate.
